Chase Winter Chill with a Sweet Side Dish

This easy sweet potato recipe is a favorite of Palos nutritionist Tracy Blake, RDN, LDN, CDCES. “In addition to their great taste, sweet potatoes contain vitamin A, which helps to boost immunity,” says Blake. “These sweet potatoes pair nicely with pork tenderloin or baked chicken and a salad.”

Roasted Sweet Potatoes with Honey and Cinnamon

Yield: 4 servings | Prep time: 15 minutes | Cook time: 30 minutes

Ingredients:

4 sweet potatoes peeled and cut into one-inch cubes

¼ cup extra virgin olive oil

¼ cup honey (local if you can find near you)

2 teaspoons ground cinnamon

Directions:

Preheat oven to 375 degrees.

Add all ingredients to a large bowl and toss to coat the potatoes.

Lay coated potatoes in a single layer on a roasting tray.

Bake for 25-30 minutes or until potatoes are tender.

Take sweet potatoes out of the oven and transfer to serving dish. Drizzle with more extra virgin olive oil if desired. Serve warm and enjoy!

Note: Recipe can easily be doubled for a larger crowd.
